My Woes on Cooking Vegetarian Foods

Reflecting back on some excellent vegetarian recipes that I ever tried, I always know that my favorite one is goes to the vegetable lasagna. This lasagna is truly amazing, as long as it is prepare with the appropriate ingredients. Here I would love to share with you on some insight regarding lasagna vegetarian dishes.

First and foremost, you will have to have yourself worry about the high quality of the vegetables that you’re placing into this recipe. And this keep remind me of the “quick version” of vegetable lasagna that I was made for the first time which turned out to be a really terrible memory for me. I was told to put in frozen peas, carrot, and broccoli, but after the dish was cooked, it end up wet and sticky.

I only figure out the problem then that I had not put in the decent amount of water that need to retain in frozen vegetables. Now you may think, it’s not just the water that add to the vegetables, but rather it is the organic “leaching” procedure when there is a severe temperature change.

It is lucky for me that I went through the difficult way when it come to preparing and short-cutting the recipe with frozen vegetables. I knew that I had turn out being smart which I also learn the precious tactic on how to save time when preparing vegetarian lasagna. But there is still one thing that I need to get improve which is the cost effectiveness. The vegetarian lasagna dish wasn’t really that cheap when adding the frozen vegetables, and not to mention all of them ended up in the garbage.

The sauce (basically quite a brand name) was so salty, hardly for anyone to swallow the making.

Apparently the kind of sauce I chose (better for me not to mention the name of the brand) was the branded one. And yes, it had been normally on sale. By properly adding this jar sauce to the frozen vegetables has just made things become even worse. I believe it is the time for me to reopen my vegetarian recipes book.

Another disaster in the kitchen I mentioned which is my tale of woe. Do not be tempted like I had been to just save a couple bucks and time. The dish will really endure whenever you do that. If I’d have utilized the right ingredient in the first place, I’d doing fine.

Fresh Garden Broccoli Stir-fry Over Quinoa Pasta

It seems like just yesterday I bought teeny tiny broccoli plugs for 25 cents each from a farmers market vendor. They looked so small and helpless I couldn’t believe they’d survive the rabbits and other predators of tender young plants. The first week I bought four plants, and they did so well in the garden that the next week I bought four more. All have survived and grown huge and one has just yielded a large head of broccoli. It may be just a broccoli plant to you, but to me it was a gardening milestone. The broccoli got planted. The broccoli survived. The broccoli will be eaten by me and not the rabbits! I was practically hysterical with glee. I couldn’t decide if I should do something simple or fancy with this ultra-fresh vegetable but decided I really wanted to focus on tasting, not disguising, the broccoli. I made a simple but delicious stir fry with artichoke hearts and lemon zest adding a special punch. Since I have lemon thyme and chives growing in the garden, I added some of those herbs, too.

The Ancient Harvest quinoa spaghetti that we used is gluten-free, and although we’re not intolerant of gluten, this noodle has become a favorite of ours. The noodles are bright yellow and have a very good texture and taste. I think the only thing in the dish that wasn’t gluten-free was my husband’s home-made seitan sausage, and that could easily be substituted with cashews, mushrooms or beans.

Ingredient list

  • broccoli, cut into bite-sized pieces
  • garlic, minced fine
  • vegan sausage or substitute a gluten-free item
  • artichoke hearts
  • shredded carrot

First, I steamed the broccoli gently in a covered wok until almost tender. Then I removed the cover and added some oil to the wok, and added finely minced garlic to cook for a minute. Thin slices of homemade seitan sausage were stir-fried in, then artichoke hearts, shredded carrot, lemon zest and lemon thyme. The cooked veggies were placed on top of quinoa spaghetti, and crushed red pepper, fresh ground black pepper and chives were added.

How We Created “Seitan Pepper Steak”

I think Chef Kimiko did great job. This is amazing, amazing innovation. Finally, our seitan become steak! But, it is interesting how she created this innovated seitan.

“It was by accident.” Kimiko told me with bitter smile.

She was cooking seitan for “seitan nuggets”, but she forgot to take off and leave the seitan in a steam cooker. Then she realized it, outside of the seitan was completely dried up and couldn’t be used as “seitan nuggets”

She didn’t want to waste the failed seitan. At the end of the day, she cut it a little thicker, fried it until it become brown, then seasoned with pepper and spicy soy sauce. Amazingly it became like steak.

It surprised everyone at Shojin. So we have a new menu. Innovation is happening at Shojin. You’ve never known what you gonna get.
