Vegetable Patties

Ingredients:
250-300g potatoes – cooked and mashed
1 garlic clove – mashed
1 small red onion – finely chopped
1 egg
Cheese – grated (either Gouda or cheddar)
1 medium sized zucchini – grated (squeeze the water out of this)
1 medium sized carrot – grated
a small handful of sunflower seeds
salt & pepper
1 tablespoon oil
fresh herbs (I used cilantro and chives) – chopped
For my fellow Indians or those not cooking for kids: 1 small green chili – chopped
a bit of flour

Method:
Pre-heat oven to 200°C.

Mix potatoes, garlic, onions and egg in a large bowl. Add the sunflower seeds, grated cheese, carrot and zucchini, salt and pepper, herbs and chilies (if using). Mix all the ingredients well. (Either with your hands or get your little one to do it for you)

Form patties and coat very lightly with the flour.

Heat a large frying pan and quickly fry the patties on both sides until they just start to color.

Take out and pat dry. Put the patties on a baking tray and bake in the oven for approx. 15 minutes.

Great fusion of veggies you’ll probably have in your fridge or larder – mixed with the indian element of Gram flour (Chick Pea flour).

    Yummy! These look really good! I’ve tried CANNED chickpeas, mashed, too, and they make for nice patties.

    Besant? Do you mean Besan? If so, Besan is chick pea (chana) flour.
    You can use a fine flour like chick pea flour that can bind, absorb and stick the ingredients together. :) Happy cooking.!

    Yes, I see, Besan is chick pea flour. I haven’t bought it for years. Forgive my error. (Not Annie Besant!) But I remember a lentil flour, too, available at health food shops that they make pappadams out of. Could it be used as a binder, too? Thanks a million!

    Yeah! thats the spirit!

    Mixing different bean flours will give you much varied nutrition also – each bean will have it’s set of nutrients, amino acids (proteins) .

    Thanks again for your reply, and for putting up your great vegetarian recipes. I’m now gonna have fun experimenting with different bean flours–like mung bean flour and lentil flour, as well as chick pea flour–and see what sort of veg patties result. Ta !

    I would think that olive oil or canola would be healthier than vegetable oil, as we know it.

    Depends.. usually veg. oil over in the UK is from rapeseed (this is Canola) – which is good on omega 6 & 3.

    they look really good…I made these today (before I watched your video) and I put in bread crumbs, chili powder, garam masala, green beans, peas, corn, spinach, and carrots…they taste great with chutney or ketchup

    The Veggie Patties were great, especially in the holy season such as navaratare when I cant eat meat to keep up with my protein diet.

    I put methi, green peas, lentils, red onions, besan ,salt, red chilli and sprayed some canola oil b4 putting patties in the oven. They look amazing and taste yum…
